做法:洗净(jìng )宰好鲫鱼,洗净淮(huái )山和薏(yì )米。用清水(shuǐ )把陈皮泡软,拍裂一小(xiǎo )块(kuài )姜,热锅,用(yòng )姜块在锅上擦(cā )一遍,放两勺(sháo )油,待油(yóu )六成热下鱼,煎(jiān )至微(wēi )黄。煮沸瓦煲里的清水,放入煎煮好的鲫鱼和其他材料(liào ),武火煮沸,转中(zhōng )小(xiǎo )火煲一个半(bàn )小时(shí ),下盐调味即可品尝。
