做法:春笋切成(chéng )片后(hòu )加(jiā )少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺(sháo )油(yóu ),放入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟左右。再(zài )加入(rù )生抽、老抽、蚝油翻炒(chǎo )均(jun1 )匀,加入少量清水半掩住春笋,盖(gài )上锅盖大火煮开后转中(zhōng )火。煮(zhǔ )到水快熬干的时候加(jiā )入(rù )盐,翻炒均匀稍收(shōu )汁时盖上锅(guō )盖焖。
