做(zuò )法:春笋切成(chéng )片后加(jiā )少许盐(yán )捞出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入2勺油,放入生(shēng )姜(jiāng )、春(chūn )笋、牛肉片、葱段翻(fān )炒1分钟(zhōng )左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清(qīng )水半掩住(zhù )春笋,盖上锅盖大(dà )火煮开后转中火(huǒ )。煮到水快熬干的时(shí )候加入(rù )盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖。
