做法:洗净宰好(hǎo )鲫鱼,洗净淮(huái )山和薏米。用清水把陈皮泡软(ruǎn ),拍(pāi )裂一小(xiǎo )块(kuài )姜,热锅,用(yòng )姜块在锅上擦一遍,放两勺油(yóu ),待(dài )油六(liù )成(chéng )热下鱼,煎(jiān )至微(wēi )黄。煮(zhǔ )沸瓦煲里的清水,放入煎煮好的鲫鱼和其(qí )他材料,武火煮沸,转中(zhōng )小火煲一(yī )个半小时,下盐调味即可品尝。
