做法:春(chūn )笋切(qiē )成片后加少(shǎo )许盐捞(lāo )出后用清水浸(jìn )泡,生姜(jiāng )切片,葱切成(chéng )段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左(zuǒ )右。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加(jiā )入(rù )少量清(qīng )水半掩(yǎn )住(zhù )春笋,盖(gài )上锅盖大火煮开后转中火。煮到水快熬(áo )干的时候加入盐(yán ),翻炒均匀稍收汁时盖上锅盖(gài )焖。
