做(zuò )法:春(chūn )笋切成片后加少许盐捞出后用清水浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分(fèn )钟左右。再加入生抽(chōu )、老抽(chōu )、蚝油翻炒均(jun1 )匀,加入(rù )少(shǎo )量清水(shuǐ )半掩住(zhù )春笋,盖上锅盖大火煮开(kāi )后转中火(huǒ )。煮到水快熬干的时候加(jiā )入盐,翻炒均匀(yún )稍收(shōu )汁时盖上锅(guō )盖焖。
