做法:春笋切成片后加少(shǎo )许盐捞出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入(rù )2勺(sháo )油(yóu ),放入(rù )生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟(zhōng )左(zuǒ )右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春(chūn )笋,盖上锅盖大火煮开(kāi )后转中火(huǒ )。煮(zhǔ )到水(shuǐ )快熬干的时候加入盐,翻炒(chǎo )均匀稍收汁时(shí )盖上锅(guō )盖焖。
