做法:春笋切成片后加少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀(yún ),加入少量清(qīng )水半(bàn )掩住春笋,盖上锅盖(gài )大火煮开后转中火。煮(zhǔ )到水(shuǐ )快熬(áo )干的时候(hòu )加(jiā )入盐,翻炒均匀稍收汁时盖(gài )上(shàng )锅(guō )盖焖。
