做法(fǎ ):春笋(sǔn )切成片(piàn )后加少许(xǔ )盐(yán )捞出后用(yòng )清水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再(zài )加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住春笋,盖上锅盖大火煮开后转中(zhōng )火。煮(zhǔ )到(dào )水快熬(áo )干的时(shí )候加入盐(yán ),翻(fān )炒均匀稍收汁时盖上锅盖焖。
