做法(fǎ ):春(chūn )笋切成(chéng )片后加少许盐捞出后用清水(shuǐ )浸泡,生(shēng )姜切片,葱切成段。锅(guō )烧热,倒入2勺油(yóu ),放入生姜、春笋、牛(niú )肉(ròu )片、葱段翻炒1分(fèn )钟左右(yòu )。再加入(rù )生抽、老抽、蚝油翻(fān )炒均匀,加入(rù )少量清水(shuǐ )半掩住春笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁(zhī )时(shí )盖(gài )上锅盖(gài )焖。
