做法:洗净宰好鲫鱼,洗净淮山(shān )和薏(yì )米。用清水(shuǐ )把陈皮泡软,拍裂一小块姜,热锅,用姜(jiāng )块在(zài )锅(guō )上擦一遍(biàn ),放两勺油(yóu ),待油六成(chéng )热下鱼,煎至微黄。煮(zhǔ )沸瓦煲里(lǐ )的清水(shuǐ ),放入煎煮好的鲫(jì )鱼和其他材料,武火煮沸,转(zhuǎn )中小(xiǎo )火煲一个半小时,下(xià )盐调味即可品(pǐn )尝。
