做法(fǎ ):春笋(sǔn )切成片后加少许盐捞出(chū )后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左(zuǒ )右。再(zài )加入生(shēng )抽、老(lǎo )抽、蚝油翻(fān )炒均(jun1 )匀(yún ),加(jiā )入(rù )少量清(qīng )水半掩住(zhù )春笋,盖上锅盖大火煮开后转中火。煮到水快(kuài )熬干的时(shí )候加入(rù )盐(yán ),翻炒均匀稍(shāo )收汁时盖上锅盖焖。
