做法:春笋(sǔn )切成片后加少许盐(yán )捞出(chū )后用清水浸泡(pào ),生姜切片(piàn ),葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽(chōu )、老抽(chōu )、蚝油翻炒(chǎo )均匀,加入少量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到水快熬(áo )干(gàn )的时(shí )候加入盐,翻炒均匀(yún )稍收(shōu )汁(zhī )时盖上锅盖(gài )焖。
