做法:春(chūn )笋(sǔn )切成片(piàn )后(hòu )加少许盐捞出(chū )后用清(qīng )水(shuǐ )浸泡,生姜切片,葱切成(chéng )段。锅烧(shāo )热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加(jiā )入生抽、老抽、蚝(háo )油翻炒均匀,加(jiā )入少量清水半掩住春笋,盖(gài )上锅(guō )盖大火(huǒ )煮开后转(zhuǎn )中火。煮到水快熬干的时候(hòu )加入盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖。
