做(zuò )法:春笋切成片(piàn )后加少许盐捞出后用清水浸泡,生(shēng )姜切片,葱切(qiē )成段。锅烧(shāo )热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段(duàn )翻炒1分(fèn )钟左右(yòu )。再(zài )加入生抽、老抽、蚝(háo )油翻(fān )炒均匀,加入少量清水半掩(yǎn )住春笋,盖上锅盖大火煮(zhǔ )开后转中火。煮到(dào )水(shuǐ )快熬干的时候加入盐,翻炒(chǎo )均匀(yún )稍收汁时盖(gài )上锅盖焖。
