做法:洗(xǐ )净宰好鲫鱼,洗净(jìng )淮山和薏米(mǐ )。用清水把陈皮泡软,拍裂一小块姜(jiāng ),热(rè )锅,用姜(jiāng )块在锅上擦一遍,放两勺油,待油六成(chéng )热(rè )下鱼(yú ),煎至微黄(huáng )。煮沸瓦煲里(lǐ )的清水,放入煎煮好的鲫鱼和其他材料,武火煮沸,转中(zhōng )小(xiǎo )火煲一个半小(xiǎo )时,下盐调味(wèi )即可品尝。
