做法(fǎ ):春笋切成片后加少许盐捞出后用清(qīng )水浸泡,生姜(jiāng )切片(piàn ),葱切成段。锅(guō )烧(shāo )热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加(jiā )入(rù )生(shēng )抽、老抽、蚝油翻炒均(jun1 )匀,加(jiā )入少量清水半掩(yǎn )住(zhù )春笋(sǔn ),盖上锅盖(gài )大火煮开后转中火。煮到水快(kuài )熬干的时候加入(rù )盐,翻炒均匀稍收(shōu )汁时盖上锅(guō )盖焖。
