做(zuò )法:春笋切(qiē )成片后加少(shǎo )许盐捞出后(hòu )用清水浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水(shuǐ )半(bàn )掩住春笋,盖上锅盖大火煮开后转中火(huǒ )。煮到(dào )水快熬干的时候(hòu )加(jiā )入盐(yán ),翻(fān )炒均匀稍收汁(zhī )时盖上锅盖焖。
