做法:春笋切(qiē )成片后加少许盐捞出后(hòu )用清水浸泡,生姜切片,葱(cōng )切(qiē )成段。锅烧热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段(duàn )翻炒(chǎo )1分钟(zhōng )左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加(jiā )入少量(liàng )清水半掩住春(chūn )笋,盖上(shàng )锅(guō )盖大火煮开后转中火。煮(zhǔ )到水快(kuài )熬(áo )干(gàn )的时候加入盐,翻(fān )炒均匀稍收汁时盖上锅盖焖。
