做法(fǎ ):春笋切(qiē )成片后加少(shǎo )许(xǔ )盐(yán )捞出后用清水浸泡,生姜切(qiē )片,葱切成(chéng )段。锅烧热(rè ),倒入2勺油,放入生姜(jiāng )、春(chūn )笋(sǔn )、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加(jiā )入少量清水半掩住春笋,盖上(shàng )锅盖大火煮(zhǔ )开(kāi )后转中火。煮到(dào )水快(kuài )熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
