做法:洗(xǐ )净(jìng )宰好(hǎo )鲫鱼,洗(xǐ )净淮山和薏米。用清(qīng )水把陈皮泡软,拍裂一小(xiǎo )块姜(jiāng ),热锅(guō ),用姜块在锅上擦一遍,放两勺(sháo )油,待(dài )油六成热下鱼,煎(jiān )至微黄。煮沸瓦煲里的清(qīng )水,放入煎煮好的鲫鱼(yú )和其(qí )他材料,武火煮沸,转(zhuǎn )中小火煲一个半小时,下盐调味(wèi )即可品尝。
