做法:春笋切成(chéng )片后加少许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成(chéng )段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分(fèn )钟左右。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加入(rù )少量清(qīng )水半掩住春(chūn )笋,盖上锅盖(gài )大火煮开后转(zhuǎn )中火。煮到(dào )水快熬干的时候加(jiā )入盐,翻(fān )炒均(jun1 )匀稍收(shōu )汁时盖上锅盖焖。
