做法:洗净宰好(hǎo )鲫鱼,洗净淮山(shān )和薏米。用清水把陈皮泡软(ruǎn ),拍裂一小块姜,热锅(guō ),用姜块(kuài )在锅上擦一(yī )遍,放两(liǎng )勺油,待油六成热下(xià )鱼,煎至微黄。煮沸瓦煲里(lǐ )的清(qīng )水(shuǐ ),放入煎煮(zhǔ )好的鲫鱼和其他材料,武火煮沸,转中小火煲一(yī )个半(bàn )小(xiǎo )时,下盐调(diào )味即可品尝。
