做法:春(chūn )笋切成片后加少许盐捞出后用清水(shuǐ )浸泡,生姜(jiāng )切(qiē )片,葱切成段。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉(ròu )片、葱段(duàn )翻炒1分钟左右。再加(jiā )入生抽、老抽(chōu )、蚝油(yóu )翻(fān )炒均匀,加入少(shǎo )量清(qīng )水半掩(yǎn )住(zhù )春(chūn )笋(sǔn ),盖上锅盖大火煮开后转中(zhōng )火。煮到水快熬干的时候加入盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。
