做法:春笋(sǔn )切成片后加(jiā )少许盐捞出后用清水浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒入2勺油,放入生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加(jiā )入生抽、老(lǎo )抽、蚝油翻炒均匀,加入(rù )少量清水(shuǐ )半掩(yǎn )住春(chūn )笋,盖上锅盖大火煮开后转中火。煮到(dào )水快熬(áo )干(gàn )的时候加入盐,翻炒(chǎo )均匀稍收汁时(shí )盖(gài )上锅盖焖(mèn )。
