做(zuò )法:春笋切成片后加少许盐捞出后用(yòng )清水浸泡(pào ),生姜切片,葱切成(chéng )段(duàn )。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻炒(chǎo )均匀,加入少量清(qīng )水半掩住春笋,盖上锅盖(gài )大火煮(zhǔ )开后转(zhuǎn )中火。煮到水快熬干的时候(hòu )加入盐,翻炒均匀(yún )稍收(shōu )汁时盖上(shàng )锅盖焖(mèn )。
