做法:春(chūn )笋切成片后加少(shǎo )许盐捞(lāo )出后用清水浸泡,生姜切片,葱切成段。锅(guō )烧(shāo )热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩(yǎn )住春笋(sǔn ),盖上锅盖大火煮开后转中火。煮到水(shuǐ )快熬干的时(shí )候加入盐,翻(fān )炒均匀(yún )稍(shāo )收汁时盖(gài )上锅盖焖。
