做法:春笋切成片后加少许盐捞出后(hòu )用(yòng )清水浸泡,生姜切片,葱(cōng )切成段。锅烧热(rè ),倒入(rù )2勺(sháo )油,放入(rù )生(shēng )姜、春笋、牛肉片(piàn )、葱段(duàn )翻炒1分钟左右。再加入生抽、老(lǎo )抽(chōu )、蚝油翻炒均匀,加入少量清水(shuǐ )半(bàn )掩住春笋,盖上锅盖(gài )大火煮(zhǔ )开后转中火。煮到(dào )水快熬(áo )干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
