做法:春笋(sǔn )切成片后加少许(xǔ )盐捞出后用清(qīng )水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝油翻炒均匀(yún ),加入少量清(qīng )水半掩住春笋,盖(gài )上(shàng )锅盖大火煮开后转(zhuǎn )中火。煮(zhǔ )到水快熬干的时(shí )候加入盐,翻(fān )炒均(jun1 )匀(yún )稍收汁时(shí )盖上锅盖焖(mèn )。
