做法:洗净宰(zǎi )好鲫(jì )鱼,洗净淮山和薏米。用清水把陈(chén )皮泡软(ruǎn ),拍裂一小(xiǎo )块姜,热锅,用姜块在锅上擦一遍,放(fàng )两勺油(yóu ),待油六成(chéng )热下(xià )鱼,煎(jiān )至微(wēi )黄。煮沸瓦煲里的清(qīng )水,放入煎煮好的鲫鱼和(hé )其他(tā )材料,武火煮沸,转中小火煲一个半小(xiǎo )时,下盐调味即可品尝。
