做法:洗净宰(zǎi )好(hǎo )鲫鱼,洗净淮山和薏米。用清水把陈皮泡软,拍裂(liè )一小块姜,热(rè )锅,用姜(jiāng )块在锅上擦一遍,放两勺油,待油六成热(rè )下鱼(yú ),煎至微黄(huáng )。煮(zhǔ )沸瓦煲里的清水(shuǐ ),放入煎煮好(hǎo )的鲫鱼和其他材料,武(wǔ )火煮沸,转(zhuǎn )中小(xiǎo )火(huǒ )煲(bāo )一个半小时(shí ),下盐调味即可品尝。
