做法:春笋切成片(piàn )后加(jiā )少许盐捞(lāo )出后用清(qīng )水(shuǐ )浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老(lǎo )抽、蚝油(yóu )翻(fān )炒均匀,加入少量(liàng )清水(shuǐ )半掩住(zhù )春笋,盖上锅盖(gài )大火煮开后转中火。煮到水(shuǐ )快熬干的时候加入盐,翻炒(chǎo )均匀稍(shāo )收汁时盖上锅盖焖。
