做(zuò )法:洗净宰(zǎi )好鲫鱼,洗净淮山和薏米。用(yòng )清水把(bǎ )陈皮泡软,拍裂一(yī )小块姜,热锅,用(yòng )姜(jiāng )块在锅上(shàng )擦一遍,放两勺油,待油(yóu )六成热(rè )下鱼,煎至(zhì )微(wēi )黄。煮沸瓦煲里(lǐ )的清(qīng )水,放入煎煮好的鲫鱼和(hé )其他材料,武(wǔ )火煮沸,转中小火煲一个半小时(shí ),下盐(yán )调味即可品尝。
