做法:春笋切成(chéng )片后(hòu )加少许盐捞出后用清(qīng )水浸泡,生姜切片,葱切(qiē )成段。锅烧热(rè ),倒入(rù )2勺(sháo )油,放入生姜、春笋(sǔn )、牛肉(ròu )片、葱段翻(fān )炒1分(fèn )钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均匀(yún )稍收汁时盖上(shàng )锅盖(gài )焖(mèn )。
