做法:洗净宰好鲫鱼,洗净淮(huái )山和薏米。用(yòng )清水把陈皮泡软,拍(pāi )裂一小(xiǎo )块姜(jiāng ),热锅,用(yòng )姜(jiāng )块(kuài )在锅上擦(cā )一遍,放两勺油,待油六成热下鱼,煎(jiān )至微黄。煮沸瓦煲里的清水,放入煎煮好的鲫(jì )鱼和其他材料,武火煮沸,转中小(xiǎo )火煲一(yī )个半(bàn )小时,下(xià )盐(yán )调味即可品尝。
