做法:洗净宰好鲫鱼,洗净淮山和薏米。用清水把陈皮泡软(ruǎn ),拍(pāi )裂(liè )一小块姜,热(rè )锅,用姜块在锅上擦一遍,放两(liǎng )勺油,待(dài )油六成热下鱼,煎(jiān )至微黄。煮(zhǔ )沸瓦(wǎ )煲里(lǐ )的清(qīng )水(shuǐ ),放入煎煮好的鲫鱼和其他材(cái )料,武(wǔ )火煮沸,转(zhuǎn )中小火煲一个半(bàn )小时,下盐调味即可品尝。
