做(zuò )法:春笋切成片后加少许盐捞(lāo )出后(hòu )用清水浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒入2勺(sháo )油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒1分钟左右(yòu )。再加入生抽、老抽、蚝油(yóu )翻炒(chǎo )均匀,加入少量清水(shuǐ )半掩(yǎn )住春笋(sǔn ),盖上(shàng )锅(guō )盖(gài )大火煮开后转中火。煮到水快熬干的(de )时候加入盐,翻炒均(jun1 )匀稍(shāo )收(shōu )汁时(shí )盖上锅盖焖。
