做(zuò )法(fǎ ):春(chūn )笋切成片后(hòu )加少许盐捞出后用清水浸泡,生姜切片,葱切成(chéng )段。锅烧热,倒入2勺(sháo )油,放入(rù )生姜、春笋、牛肉(ròu )片、葱段翻(fān )炒1分钟(zhōng )左右。再加(jiā )入生抽、老抽、蚝(háo )油翻炒均匀,加入少量(liàng )清(qīng )水半掩住春笋,盖上(shàng )锅(guō )盖大火煮开后转中(zhōng )火。煮到水快熬干的时候加入盐(yán ),翻炒均匀稍收汁(zhī )时盖上锅盖焖。
