做法:洗(xǐ )净(jìng )宰(zǎi )好鲫鱼,洗净淮山和薏米(mǐ )。用(yòng )清水(shuǐ )把陈皮泡软,拍裂(liè )一小块姜,热锅(guō ),用姜块在锅(guō )上(shàng )擦一遍,放两勺油,待油(yóu )六成热下鱼,煎至微(wēi )黄。煮沸瓦煲里的清水,放入煎煮好的鲫鱼和(hé )其他材料(liào ),武火煮沸,转中小火煲一个半小时(shí ),下(xià )盐调味即可品(pǐn )尝。
