做法:春笋切成片后加少许盐捞出(chū )后(hòu )用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段(duàn )翻炒1分钟左(zuǒ )右。再加入生(shēng )抽、老抽(chōu )、蚝油翻炒均匀,加(jiā )入少量清水半(bàn )掩住春笋(sǔn ),盖(gài )上锅盖大火煮开后转(zhuǎn )中(zhōng )火。煮(zhǔ )到(dào )水快(kuài )熬干的时候加入盐,翻(fān )炒均(jun1 )匀稍收汁时(shí )盖上锅盖焖。
