做法:洗净宰好鲫(jì )鱼,洗净淮山(shān )和薏(yì )米。用清水把陈(chén )皮泡软,拍裂一小(xiǎo )块姜(jiāng ),热锅,用姜块在锅(guō )上擦一遍,放两勺(sháo )油,待(dài )油六成热下鱼(yú ),煎至微黄。煮沸瓦煲里的清水,放入煎煮好的鲫(jì )鱼和其(qí )他材(cái )料,武火煮沸,转中(zhōng )小火煲(bāo )一个半小时,下盐(yán )调味即可品(pǐn )尝。
