做(zuò )法:春笋切成片后加(jiā )少许盐捞出后用清(qīng )水浸泡,生姜切(qiē )片,葱切成(chéng )段。锅烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱(cōng )段翻炒(chǎo )1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水半(bàn )掩住春笋,盖上(shàng )锅盖大火(huǒ )煮开后转(zhuǎn )中火。煮(zhǔ )到(dào )水快熬干的时候(hòu )加入盐,翻炒均匀稍收汁时(shí )盖上(shàng )锅盖焖。
