做(zuò )法:洗净宰好鲫鱼,洗(xǐ )净淮山和薏(yì )米。用清水把陈皮泡软,拍裂一(yī )小块姜,热锅(guō ),用(yòng )姜块在锅上擦一遍,放两勺(sháo )油,待油六成热下鱼,煎至微黄(huáng )。煮沸瓦(wǎ )煲里的清水(shuǐ ),放入煎煮好的鲫鱼和其他材料,武火煮沸,转中(zhōng )小(xiǎo )火煲一个半(bàn )小时,下(xià )盐调(diào )味(wèi )即(jí )可品尝。
