做法(fǎ ):春笋切(qiē )成片后加少许盐(yán )捞出后用清(qīng )水浸(jìn )泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺油(yóu ),放入(rù )生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟(zhōng )左(zuǒ )右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水(shuǐ )半掩住春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到(dào )水快熬干的时候加入盐,翻炒(chǎo )均匀稍(shāo )收汁时盖上锅盖焖。
