做法:洗(xǐ )净(jìng )宰好鲫(jì )鱼,洗净淮山和薏(yì )米。用清水(shuǐ )把陈皮泡软,拍裂一小块姜,热(rè )锅,用姜块在(zài )锅(guō )上擦一遍,放(fàng )两(liǎng )勺油,待油六成热下鱼,煎至微黄。煮(zhǔ )沸(fèi )瓦煲里的清水,放入煎(jiān )煮好的鲫鱼和其他(tā )材料(liào ),武火煮(zhǔ )沸,转中小火煲一个半(bàn )小时,下盐调味即可品尝。
