做法:春笋切成(chéng )片后加少许盐捞出后用清水浸(jìn )泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入(rù )2勺油(yóu ),放入生姜(jiāng )、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再(zài )加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水(shuǐ )半掩(yǎn )住春笋,盖(gài )上锅盖大火煮开后转中火。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍收(shōu )汁(zhī )时(shí )盖上(shàng )锅(guō )盖焖。
