做法:春笋切成片后加少(shǎo )许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成(chéng )段。锅烧热(rè ),倒入2勺(sháo )油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加入(rù )少(shǎo )量清(qīng )水(shuǐ )半掩住春笋(sǔn ),盖上锅盖大火煮开后转中火。煮到水快熬(áo )干的时候(hòu )加入盐,翻炒均匀稍(shāo )收(shōu )汁时盖上锅盖焖。
