做法:春笋切成片后加少许盐捞出后用清水浸(jìn )泡,生姜切片,葱切成段(duàn )。锅烧热,倒入2勺油(yóu ),放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再(zài )加入生抽(chōu )、老抽、蚝油翻(fān )炒均匀,加入少量清水半掩住春笋,盖(gài )上(shàng )锅盖大(dà )火煮(zhǔ )开后转中火。煮到水快(kuài )熬干(gàn )的时候加入盐,翻(fān )炒均匀(yún )稍(shāo )收(shōu )汁时盖上(shàng )锅盖(gài )焖。
