做(zuò )法:春笋切成片(piàn )后加少许盐捞(lāo )出后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝(háo )油翻(fān )炒均匀,加入少量清(qīng )水半(bàn )掩(yǎn )住(zhù )春笋,盖上锅(guō )盖大火煮开后转(zhuǎn )中火。煮到水快熬干的时候(hòu )加入盐,翻炒均匀稍收汁(zhī )时盖上锅(guō )盖焖(mèn )。
