做法:春(chūn )笋切成片后(hòu )加少许盐捞出后(hòu )用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺(sháo )油,放入(rù )生姜、春笋、牛肉片、葱(cōng )段翻炒1分(fèn )钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少(shǎo )量(liàng )清水(shuǐ )半掩住春笋,盖(gài )上锅盖大(dà )火煮开后转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
